Chicken and veggie foil bakes and Cajun quick rice!

Ingredients


  • 3-4 Chicken breast (similar in size or they cook weird)
  • 1 bag frozen broccoli Normandy
  • 1 bag frozen bell peppers and onions (1/2 for chicken 1/2 for rice)
  • 1/3 cup Italian dressing 
  • Creole seasoning
  • Italian seasoning 
  • Black pepper 
  • Tin foil
  • 2 c Minute rice
  • 3-4 tabs butter (optional)
  • Chicken-
  • Preheat oven 400°

Method

Grab a big of piece of foil to wrap chicken and veggies about 12x12 depending on breast size. Put each breast in center of individual foil, top with veggies evenly among the breasts. Top with Italian dressing and seasoning. Fold up in a tent like fashion sealing at the top bake for 30-45 minutes(depends on oven and size of chicken).
Cajun Rice-
2 c instant rice in a microwave safe bowl. Add 1/2 bell peppers and onions and 2 tsp of Cajun seasoning . add 2 1/8 c water and microwave for 6 minutes.
